新式おせち New style Japanese New Year's dishes

今年はイギリスで手に入る材料を使って洋風おせちを作りました。
おめでたい紅白なますは、大根がないので代わりにセロリ、にんじん、さらにスモークサーモンも入れてみました。
伊達巻代わりにはカニカマとチーズを巻いた卵焼き。イギリスでは「シーフードスティック」という名前でカニカマが売られています。巻物の形が文化発展を意味するそうなので、形は違うけれど巻いてあればいいか、ということで。
そして「まめに暮らせるように」食べる黒豆の代わりに、枝豆サラダ。イギリスのスーパーで冷凍グリンピーズのとなりに冷凍枝豆「EDAMAME BEANS」を発見した時は、小躍りして喜びました。大好物なんです。ちなみにあずき「ADZUKI BEANS」も缶で売られていて手に入ります。
「よろこぶ」にかけた昆布巻きは両親が日本から送ってくれたものを食べました。イギリスでは海藻を食べるのは一般的ではありません。
「長生き」の象徴の腰の曲がったエビには、申し訳程度に小さな冷凍エビを使用。しいたけではなく、マッシュルームの上に載せてみました。さらにテリーヌもつくって色どり豊かなおせちができました。

For the New Year, I cooked the following Japanese foods/dishes in a western arrangement, using ingredients available in the UK.
Red-and-white pickles, which represent good luck, are usually made from carrot and daikon- Japanese radish. I used celery instead of daikon, and also mixed in smoked salmon.
Datemaki is made from egg and ground fish meat and its shape is like a scroll, which implies advancement of culture. I wound egg around seafood sticks and cheese, which wasn't like a scroll but at least was rolled.
Black soy beans signify diligence. I made edamame- young soy beans- in the salad instead of black ones. When I found frozen 'edamame beans' next to frozen peas in the supermarket, I jumped for joy because they are one of my favourite Japanese foods. Incidentally, we can buy tinned 'adzuki beans' which are a Japanese foodstuff usually used for confections in the supermarket.
Kobumaki, a kelp roll signifies joy. We enjoyed a genuine Japanese kobumaki which my parents kindly sent me. In the UK it's not common to eat seaweed.
Prawns with a bent back are symbols of long life as their bent backs represent elderly people. I used only a few tiny frozen prawns and put them on mushrooms. In addition, I made a terrine to increase the variety of dishes.

さて、根菜を使った煮しめですが、イギリスには里芋もごぼうもありません。そこで、一か八か、こちらの根菜、パースニップとスウェードを和風に煮てみました。これらはイギリスでは通常、じゃがいもと同様にローストしたり、マッシュして食べられています。パースニップは、白くて甘い大きな人参のような根菜。スウェードはかぼちゃみたいに硬くて切るのが大変なクリーム色の丸い根菜です。鶏手羽と一緒に煮た野菜は・・・味はまあまあ。イギリス人の夫も一応おいしいといっていました。でもやはりお正月の定番とは全く違う煮物になったのでした。

For stewed root vegetables, because there is no taro or burdock in the UK, I tried using different local varieties instead- a parsnip and a swede, which I had never seen in Japan. In the UK they are normally roasted or mashed like potatoes. A parsnip is sweet and shaped like a white big carrot. A swede is round, cream-coloured and hard to cut like a Japanese pumpkin. I simmered them with chicken drums in the Japanese style to make the traditional New Year's dish. As a result, the taste was not too bad, my husband said delicious-but it was completely different from the standard one.

クリスマスダック Christmas roast duck

今年のクリスマスは家に旦那のお母さんが来て、3人で過ごしました。クリスマスディナー(イギリスでは25日の昼ごはん)には、ターキー(七面鳥)丸焼きだと大きすぎるので、旦那が奮発してダック(鴨)を買ってきました。ダックの丸焼きなんて初めてです。鶏の丸焼きを作る時はいつもソーセージミートを中に詰めて焼くのですが、今回ダックにはオレンジを詰めました。1時間半オーブンで焼いてできあがり。ローストベジタブルと一緒にたっぷりのグレイビーソースをかけて食べました。ジューシーで美味しかったです。

My Mother-in-law came to our house and spent Christmas with us. For our Christmas dinner, which in the UK is normally lunch time on the 25th , a whole turkey would have been too big for the three of us, so my husband "splashed" out on a whole duck instead. It was the first time that I have roasted a whole duck at home. We normally have a sausage meat based stuffing when roasting a chicken. This time we stuffed orange inside the duck and roasted it for one and half hours. We ate the duck with roast vegetables and plenty of gravy sauce. It was juicy and tasty.

イギリスでの鶏の売られ方 How chicken meat is sold in the UK

イギリスで「とりもも肉」や「とり胸肉」のパッケージを買うと、とり丸ごと1羽買うよりもかなり割高です。とり丸ごとなんて日本のスーパーマーケットではなかなかお目にかかれないものですがイギリスでは常に売り場に並んでいます。また、日本で売られているような切り身の「とりもも肉」は珍しく、こちらではほぼ骨付きで売っています。さらに驚いたことに「とりひき肉」は存在しません。代わりに「七面鳥ひき肉」が店頭にならんでいます。一度しか買ったことはありませんが、「とり胸肉のひき肉」のような感じです。とりを加工したり、パック詰めにする手間を考えたら丸ごとの方が安いのは納得できますし、イギリスの家庭には大きなオーブンがあるが普通なので、丸焼きが可能なのです。

In the UK a pack of chicken breast or thigh costs more per kilo than a whole chicken. We seldom see a whole chicken in supermarkets in Japan. In the UK, Chicken thigh is normally sold on the bone whilst in Japan fillets of chicken thigh are popular. What's more, there is no chicken minced meat in the UK, instead we find turkey minced meat. It tasted like chicken breast minced meat when I tried it.
Households in the UK normally have ovens big enough to roast a whole chicken, so for them, it's normal to deal with a big chunk of meat. It's understandable that a whole chicken costs less owing to the bones and the reduced cost of cutting and packing.

そんなわけで我が家ではいつも鶏丸ごと買います。詰め物をしてオーブンで丸焼き。二人で一週間ほどその鶏で過ごせます。クリスマスは鶏より大きな七面鳥丸焼きを作る予定。一体何日もつんでしょう?夫曰く「数週間は」・・・。

So we normally buy a whole chicken, stuff it and roast it in the oven, which provides almost a week of meals for the two of us. We are going to roast a whole turkey for this Christmas. I wonder how many days it will keep us going? "Weeks" says my husband..............

キノコ狩り Discovery of wild mushrooms

ウォーキングと野生の食べ物採集が大好きな私たちは、先日、食べられる野草ハンドブックを持って散歩に出かけました。秋の味覚といえばキノコ。ただ食べられるものと毒があるものを見分けるのが難しいので、キノコ狩りはここイギリスでもタブーとされています。

We love walking and foraging in the wild. The other day, we went for a walk with a handbook of edible wild plants. Some of the delicacies of autumn are wild mushrooms. However, it is so difficult to distinguish whether they are edible or poisonous that picking wild mushrooms is a kind of taboo in the UK, as in Japan.

ウォーキングのついでにということで、特に真剣にキノコ探索をしていたわけではないのですが、ふと石垣からスポンジが飛び出ているのを発見。なんで岩からスポンジ?思って見てみるとなんとキノコでした。ひだがあるキノコの裏側しか見た事がなかった私は、「気持ち悪!毒キノコに違いない」と思ったのですがハンドブックを見てみると「セップ」というキノコに似ています。そこで収穫して家でインターネットで検索してみることにしました。帰宅途中に出会った近所の人は口をそろえて「怖いから私なら食べない」。ごもっとも。

We didn't look for mushrooms very seriously, it was only for additional fun while walking. I found a sponge sticking out from a stone wall. I wondered why the sponge come out from the wall and it turned out to be a mushroom. I thought that the strange spongy stuff must be poisonous because I had only seen edible mushrooms with a gill-like structure under their caps before. But the mushroom looked like a cep in our handbook, so we decided to collect them and to search for further information on the Internet later. One the way back, we met a few of our neighbours and all said that they wouldn't try it because of the risk. Well, it's absolutely sensible.

家に帰ってインターネットで発見したキノコ情報をみてみてびっくり。それはイタリア料理で有名な高級な野生のキノコ、ボルチーニ茸だったのです。それでもかなり恐る恐る、バターで焼いたキノコを食べてみたのですが、脂の乗ったやわらかーい豚肉のような味。目からうろこの美味しさでした。今台所は乾燥途中のボルチーニの香りに包まれております。

We were amazed when we found out about the mushroom on the Internet. It was a cep, also known as porcini, which is an expensive wild delicacy, especially often used in Italian cuisine. We tasted the mushroom sauted with butter, nervously. The taste was like a juicy tender pork, which was sensationally delicious. Now our kitchen is filled with the smell of drying mushrooms.

コルフ島をレンタカーで回る Driving around Corfu island

友人のヨットに別れを告げて、コルフ島に戻り、レンタカーで島を回りました。コルフ島はメジャーなリゾート地のようで、頻繁に飛行機の離着陸が見られます。海を泳ぎながら着陸する飛行機を真下から眺めたのは初めてです。

After we left our friends' boat, we returned to Corfu island and drove around by rental car. Corfu seemed to be a very popular holiday destination. I frequently saw many aeroplanes taking off and landing. It was the first time I had seen airplanes just above me while swimming.

ダッシアのホテルを拠点として美しいといわれている島の北側を中心に回りました。たくさんのビーチがあったので、毎日何箇所かに絞って泳ぎました。なかでも一番のお気に入りは歩いて(か海から船で)しかたどり着けないビーチ(アジオス ステファノスというところから歩きました)。暑すぎて歩くのはちょっと大変でしたが、海沿いの美しい景色が見られて、さらには人がほとんどいない美しいビーチで泳げて大満足。お勧めです。

We were based in Dassia and drove around mainly the north part of the island, which is said to be more beautiful. There were so many beaches that we chose the best ones to swim from every day. One of my favourites was a beach which was only accessible on foot or boat. We stated walking from Agios Stefanos and saw fantastic views alongside the coast, although it was too hot to walk comfortably. What's more, the beautiful remote bay was worth swimming in. I'd recommend it.

食事はというと、毎日トマトやアボカドなどの野菜にディップをつけて食べていました。みずみずしい野菜とギリシャのディップの組み合わせはこの暑い気候にあっていて最高です。タツキ(ヨーグルトときゅうりのディップ)、タラモサラダ(じゃがいもと魚の卵のディップ)(※日本のタラコといものサラダだと私は思っていたのですが、実はギリシャ料理だった・・・)、などなど。これに地元民の作ったお手頃な赤ワインを冷やして飲む(赤ワインをわざわざ冷やして飲んだのは初めて・・・)と、シンプルですが極上の食事でした。

Talking of food, we enjoyed fresh vegetables, such as tomatoes and avocados, with dips every day. The fresh vegetables and Greek dips were one of the best combinations for the hot climate there. We enjoyed 'tzatziki,' yoghurt cucumber dip, 'Taramosalata,' fish roe and potato dip, which I had actually mistaken as Japanese original salad with cod roe (pronounced 'tarako') and potato (pronounced 'imo'). Those simple foods became great meals with local reasonable red wine. It was the first time I had deliberately chilled red wine.

滞在中一度だけ雷と大雨に見舞われました。停電して、水も使えないのには困りましたが、雨水を汲んで来てしのぎました。後で聞くと別の地方では嵐で船が壊れるなど大変な被害にあった模様。まあ、そんな1日もありましたが、ほぼ天候に恵まれ(たまに暑過ぎましたが)、島を満喫できました。

During our two week stay, we had only one day when the weather was bad. We had torrential rain and thunder. That caused a power cut. It was a bit inconvenient not to be able to use water either, but we could draw rain water, so that was alright. Later we heard that the thunderstorm had caused a lot of damage in other areas, such as breaking boats. Anyway, we had almost perfect weather there, except for the sizzling heat and enjoyed Corfu island thoroughly.

ギリシャの海をヨットでまわる Sailing in Greece

夫の友人がヨットに招待してくれたので、ギリシャのコルフ島(ケルキラ島)に飛びました。コルフ島はイオニア海(ギリシャ西部とイタリア南の間)に浮かぶ島です。9月半ばにして連日30度前後。うだるような暑さの中、1日コルフ市街を見学し、翌日友人のヨットに合流しました。

My husband's friends invited us to a sailing trip in Greece on their yacht. We flew to the island of Corfu (Kerkyra) in the Ionian Sea, which is between western Greece and southern Italy. In the middle of September, the temperature was 30 degrees or so, day after day. We went sightseeing in Corfu town in the intensive heat and the next day joined the yacht.

合計5人で乗ったのですが、ヨットは約15mもの大きさで、広くて快適。トイレ&シャワーも各キャビンについていました。十分な広さのベットと夜通し活躍してくれた小さな扇風機のおかげで夜もぐっすり眠ることができました。
暑いので(?)昼からビール。ヨットを走らせ目的地についたらそこで泳いでデッキで昼食を食べ、また移動してさらに泳いで夜ごはん。まさに夢のような1週間でした。イルカも発見!はじめ海に慣れず船酔いにやられていて、ずーっと海を眺めていたおかげでしょうか。

The yacht was 50 feet long and had plenty of space for five of us. Each cabin had a toilet(heads) and shower. The reasonably big bed and one small fan, which was working all night, gave us agreeable sleep.
It was so hot in the daytime that we couldn't refuse a beer. We sailed to one place, we jumped into the sea and had lunch on the deck. Then we sailed to another spot, we swam and had dinner. The whole week we enjoyed the sunshine and this dreamlike life on the yacht. Moreover, I was lucky to see a dolphin, which was actually because I'd got seasick and was focusing on the horizon.

-The three most memorable things on the yacht for a week-

1、青い洞窟にゴムボートで入ったこと
内部が青色に輝いている秘密の小さな洞窟に連れて行ってもらいました。壁の岩に穴が空いていて光がもれてきているんだそう。幻想的な青い光。言葉にならない美しさでした。

1. Exploring an blue cave by rubber boat
Our friends took us to a small secret cave which shone blue inside. According to them, there were holes in the rock which allowed the sunshine in. The blue light gleaming dreamily was beautiful beyond words.

2、ターコイズブルーの海を泳いだこと
断崖絶壁で陸からはアクセスできないようなビーチに連れて行ってもらいました。水がなんとターコイズブルー!岩からでる成分のためらしいですが、暖かい青い海に白い砂。まさに楽園でした。

2. Swimming in the turquoise blue sea
We reached a deserted beach which may be inaccessible from the land because of the sheer cliff. Surprisingly, the water was amazing turquoise blue!! That is said to be caused by the small particles in the water. The warm blue water and glistening white sand made me feel as if I were in paradise.

3、ヨットレースに参加したこと
レフカス島で毎年開催される「南イオニア海レガッタ(ヨットレース)」に参加しました。初心者の私は他のヨットにぶつからないように見ているだけでしたが、ヨットが風でかなり傾くのでスリルがありました。他のベテラン達は真剣でちょっとぴりぴりしていましたが、結果は例年にない好成績だったようでよかったです。

3. Joining a regatta.
We entered the South Ionian Regatta, which takes place every year starting from Lefkas island. I was a novice sailor, so what I could do was to be a look-out to help avoid crashing into other boats. It was thrilling that our boat was leaning over so far in the wind. The others, -experienced sailors- were a bit serious and tense. Anyway they seemed to be pleased to get a better result than they had previously.

番外、ウニ採集
泳いでいて浅瀬の岩場にウニを発見。早速夫を呼んで採集。喜んで(何しろウニは日本の珍味ですから。)10個程採集しましたが、割ってみるとおなじみの黄色い部分がない・・・。日本で食べるウニとは違った種類だったのでしょうか。残念。

An extra; Collecting sea urchins
On swimming, I found sea urchins on the seabed in the shallows. So I asked my husband to pick them up with me with gloves. We were willing to pick them, for sea urchin eggs are a Japanese delicacy, and we got more than ten in a short time. However, when I split them, there were no familiar yellowy edible parts inside. They might be a different kind from Japanese edible sea urchins. What a pity!

ヨークと崖の上のパフィン York and puffins on a cliff  

日本ではアメリカのニューヨークの方が有名ですが、イギリスには、ニューヨークの名前の由来であるヨークという長い歴史を刻んできた町があるのです。スコットランド旅行の帰りに旦那の友人を訪ねてヨークシャー地方の主都ヨークにやってきました。中世の街並みが残るヨークはほぼ一周城壁で覆われており、その上を歩いて回ることができます。

Although it is likely that New York in the US is better known among Japanese, there is a city named York in the UK, which has carved out a long history and gave its name to New York. On the way back from our Scottish trip, we visited York, the city in the centre of Yorkshire, to meet my husband's friends. York has retained many medieval structures and is surrounded by walls. People can walk around almost all of the walls and look down on the city.

またヨークは大聖堂も有名。英国国教会の中で、ビショップ(主教)の代表であるアーチビショップ(大主教)はトップがカンタベリー大主教、そしてナンバー2がヨーク大主教とされています。なので、ヨーク大聖堂はイングランドの全教会なのなかで2番目の地位を占めているわけです。北ヨーロッパで一番大きなゴシック式の大聖堂で、現在の建物は1220年に建設が始まり、250年後に完成したそうです。
私たちが見学していると、聖歌隊の歌の練習が始まりました。パイプオルガンと聖歌が聖堂内に響き渡り、より荘厳な雰囲気を味わうことができました。

York is also famous for its Minster. In the hierarchy of the Church of England, the archbishop of the Canterbury is NO.1, and NO.2 is the archbishop of York. An Archbishop is senior to the bishops from all the other cathedrals. Therefore York Minster is the second most important church in England. York Minster is the largest Gothic cathedral in northern Europe. The present buildings was begun in 1220 and completed 250 years later.
While we were walking around inside, a choir started their practice. The sound of the pipe organ and their beautiful voices traveled throughout the minster, which made it even more impressive.

翌日、ヨークシャー地方の東海岸にあるバンプトンという崖を訪れました。8kmも続く切り立った崖はイングランド最大の海鳥の繁殖地で、バードウォッチングで有名です。なかでも有名なのがペンギンみたいな顔と足をしているかわいいパフィン。見れて大感激です。

The following day, we went to the east coast of Yorkshire, to Bempton, which consists of 5 miles (8km) of steep cliffs. It is the largest seabird-breeding colony in England and is a good spot for bird-watching. I was extremely pleased that I could see popular puffins there. They have a cute face and feet like a penguin.
