ステーキ&エールパイ Steak and ale pie

今年のバレンタインデーのごちそうに、イギリスの伝統パブ料理「ステーキ&エールパイ」に挑戦してみました。日本語でいうなら牛肉のビール煮(シチュー?)のパイ包焼き。

日本のほとんどのビールはラガーですが、エールは伝統的なビールの一種でイギリスではメジャーです。エールは上面発酵イーストを使用した常温、短時間発酵のビールでラガーは下面発酵イーストを使用した低温、長時間発酵のビールだそう。エールは常温で楽しむのが普通で涼しい気候のイギリスにはぴったりかも。パブでグラスに注がれたビールには日本みたいな泡がありません。イギリスではパイント(568ml)単位でビールを頼むのですが、パイント・グラスといって、なみなみ注いで1パイントになるように設定されたグラスで提供されます。泡でその容量をとってしまうとサギ(!?)になるので、カウンターではわざと泡をあふれさせてぎりぎりまで注いでくれるわけです。(※パイント線が付いたグラスもあって泡もありらしいですが。)日本のビールの注ぎ方黄金比(?)7対3はありえません!

For Valentine's day, I made a steak and ale pie for the first time. It is a traditional British pub dish, a pie with beef casserloe cooked in beer.

An ale is a type of traditional beer and popular in the UK while most of the beers in Japan are lagers. Ales are brewed with top-fermenting yeast which allows for rapid fermentation at warmer temperatures. Lagers are brewed with bottom-fermenting yeast which ferments more slowly and at colder temperatures. Ales are to be drunk at room tempretures, which I think suits the relatively cool UK climate. There is no froth on beer in pubs unlike Japan. People order a pint, which is the unit for beer (568ml in the UK) and its glass is designed for a pint when it's poured to the full. If the froth takes part of the volume, the liquid would be less than a pint, which would be regarded as a rip-off. Therefore bartenders normally make the froth overflow and pour the beer to the brim. The Japanese beer pouring ratio, (golden ratio) of 7 to 3 is impossible here. 

イギリスで人気の料理家、ジェイミー・オリバーの「ステーキ、ギネス&チーズパイ」を参考にして作りました。牛肉はオーブンではなくスロークッカーで一晩煮込み(イギリスの煮込み用牛肉はゆっくり煮込まないととんでもなく固いです)、ビールはギネス(アイルランドの黒ビール)ではなく、エールを使用。(自分がそのエールが飲んでみたかったので買ってみました(笑)。)煮込んだ味は・・・エールのそのまま味・・・ビール好きでもちょっとこの味は・・・。ということで少し自分で味を適当に加えてチーズを入れたらかなりいい感じに。パイ生地も手作りし、2日間かけて完成させたパイには夫も自分も大満足。でも手間も時間もかかるし、たまにのごちそうかな。夫はもっと頻繁に食べたいと言っていますが。ビールもったいないし。

I chose a recipe, 'Steak, Guinness and cheese pie' by Jamie Olive, a popular British chef. I cooked beef in a slow cooker overnight instead of an oven  (casserole beef here is too tough to eat without cooking slowly for a long time), using an ale instead of Guinness as I wanted to drink the ale. The next day, the stew tasted......exactly like the ale itself. Well, I thought it shouldn't be like that even though I like beer. So I added some seasonings, then cheese, to my taste. I also made the pie dough myself. My two days' effort certainly satisfied my husband and me. However, I feel that a homemade steak and ale pie should be a treat once in a while as it's time consuming and beer is too good for putting into the dish; although my husband would like it regularly.

「犬のお尻」という名のフルーツ A fruit called 'dog's bottom'

12月の初め、散歩中に実がなっている木を発見。前日に見た「野生の食べ物」ガイドブックの中にそのような実が載っていたのを思い出し、「食べられるかも!」と思って採集しました。

At the beginning of December, we found fruit on a tree on our walk. It occurred to me that I saw fruit like that in a wild food guidebook the day before. So we collected some, hoping they were edible.  

帰ってきて調べると、メドラー(西洋カリン)というものでした(日本のカリンとは似ても似つかぬ実。大きいローズヒップみたい)。中世まではポピュラーな果物だったようですが、今ではあまり知られていないようです。半分腐っているくらいになってようやく食べられるようになります。これはイギリスの寒冷な気候のせいらしく、地中海地方などでは木からもいでそのまま食べられるそう。そして、中世には「犬のお尻」と呼ばれたとか。た、たしかに見た目・・・。その名前じゃ人気がなくなるのも分る気がします。

They were medlars. (Their Japanese name is western karin but is quite unlike Japanese karin. It's rather like a big rosehip.) Medlars had been popular fruit until the mediaeval period but are now not well-known. They should be kept until they are half-rotten, then finally they become edible. That seems to be because of the cold weather in the UK as the young fruit can be eaten straight off the tree in Mediterranean regions. In the Middle age, it used to be called 'dog's bottom.' I can recognise why from its appearance. Obviously the name didn't help stop the decline in its popularity.

メドラーとオレンジのクランブルを作ってみました。種をよけて、食べられる部分をほじくるのに相当時間がかかりました。これが衰退の一番の原因かも。でも味はよかったです。あんことやわらかい干しガキの中間ような感じ。また「犬のお尻」を発見したいものです。

I made medlar and orange crumble. It took ages to scrape out the edible part from the small fruit and separate it from the pips. This probably would have been the biggest drawback for medlar eating. However, it was delicious, tasting like something between a sweet bean paste and a soft dried persimmon to me. I would like to round up 'dog's bottoms' again.

パラソルマッシュルーム Parasol mushroom

去年、食べられる野生のきのこ、ポルチーニ茸を道端で偶然発見して以来、興味がわいてきたきのこ狩り。今年の秋から友人からもらったきのこガイドブックを片手にウォーキングに行くようになりました。何度か、これは食べられる!というきのこに出会ったももの、毒きのこにも似ていて判断がつかず、食べるのは断念していました。

We have had our interest aroused since we chanced upon an edible wild mushroom, -a cep -  last year. This autumn,
I got into a habit of bringing a mushroom guide book, given to me by a friend, on our walks. Having spotted some mushrooms which seemed to be edible, we couldn't definitely distinguish them from poisonous ones, so  we did not try them.

しかし先日ついに新たな食べられるきのこを発見!その名は「パラソルマッシュルーム(学名:Macrolepiota procera)」、野原に点在していました。念のためネットでも調べて確かめ、サイトのおすすめ通り、バターで炒めて食べてみました。マイルドで美味しかったです。

そして、後でネットにて、「カラカサタケ」という和名があるのを知りました。日本の某サイトには、カラカサタケについて「(かなり似た毒きのこがあるので)できれば食べない方が賢明です」と但し書きが。えー!?もう、食べちゃったけど・・・。あわてて英語のサイトを見ると、ヨーロッパではそっくりの毒種Chlorophyllum molybdites(オオシロカラカサタケ)はないので、判断しやすいとのことでした。命の危険を冒す気はないけれど、野生のきのこは魅力的。これからも細心の注意を払って、きのこ探しに取り組みたいと思います。

But finally, other edible mushrooms were found. They were parasol mushrooms (biologically named Macrolepiota procera) and were dotted around the field. After checking on the internet in order to make  doubly sure, we fried one in butter as a website suggested and tried. It was mild and tasty.

Then later, I discovered the parasol mushroom has a Japanese name, 'Karakasa-take' ('Karakasa' is a traditional Japanese umbrella made of bamboo and paper, 'take' means mushroom). A Japanese website mentioned, 'there is a poisonous mushroom similar to Karakasa-take, which is hard to distinguish, so it is advisable not to taste'. What? We have already eaten one.... Hurry-scurry, I turned back to the English website. That said that the parasol mushroom is difficult to mistake for any other as the poisonous look-alike Chlorophyllum molybdites does not occur in Europe. I certainly wouldn't want to risk my neck but wild mushrooms are nectar. Therefore I will keep up mushroom hunting but with great caution.

セゴンツァーノのピラミッド The Pyramids of Segonzano

イタリアに神秘のピラミッドが存在します。その名も『Piramidi di Segonzano』(セゴンツァーノのピラミッド)。このピラミッドはお墓ではなく、自然現象(浸食作用)によってでできた、不思議な地形。多くは、ピラミッドというか柱の形をしており、上に大きな岩がのっかっています。これで下の部分が風化を免れ、こんな形(20mもの高さになるものもある) が残ったわけです。

There are mysterious pyramids, called 'Piramidi di Segonzano', the pyramids of Segonzano in Italy . They are not tombs but amazing geographical features created by erosion. Most of these earth pyramids are column-shaped topped by a large boulder. Owing to the top protection rocks, the earth below has escaped from weathering and been shaped as they are, reaching up to 20 m high.

場所はイタリア東北部トレントの近く。オーストリア国境に近く美しい山々に囲まれた土地です。岩マニア、いや地理学者以外、日本からわざわざ訪れることはないでしょう。ちなみに私たちは岩マニアではなく、友人のパーティー出席のためにこの地方に来ました。楽しいパーティーはもちろん、イタリアが色々見れて大満足の旅でした。

しかし、この形!よく立ってるもんだ・・・。

The pyramids are situated near Trento, northeastern Italy. The region borders on Austria and is amongst beautiful mountains. It would be only a rock maniac or a geographer who particularly visits the pyramids far from Japan. We are not rock buffs. The reason why we were in the region was to attend a friends' party. We had a most enjoyable time at the party but also enjoyed seeing various Italian places on this trip.

Again, look at the shape of the pyramids !! It's extraordinary that they stand erect like that.

フェラーリ博物館 The Ferrari Museum

中世の町シエナを離れ、翌日ハイテクカーが並ぶフェラーリ博物館へ向かいました。 博物館はフィレンツェから約100km北にあるモデナという町の近くマラネロにあります(シエナはフィレンツェの約50km南)。相当のフェラーリ好きで ないと、わざわざ日本から行くことはないでしょう。私自身はスポーツカーにもF1レースにも全く興味はないのですが、興味ある男性は多い-私の夫を含め。
The following day, we left the historical town, Siena and went to a modern high-tech attraction, the Ferrari Museum. It is situated at Maranello, near Modena, about 100km north of Florence (Siena is about 50km south of Florence.) Only fanatic Ferrari fans would go there from Japan. I have no interest in F1 races or sports cars myself but it's a magnet for men, including my husband.

レイシングカーはもちろん、中国、インドツアーをした車が展示されており、かっこいいフェラーリが、田舎道を象と一緒に走ったりしている写真集はそのコントラストに笑えました。

There were rally cars used for tours of China or India, as well as racing cars. The photographic collections of the tours, showing for example a stylish posh Ferrari running on a rural road with elephants, made me smile.

お土産屋のミニカー(フェラーリモデル)の値段にも度肝を抜かれました。大人のおもちゃですね。

At the gift shop, the price of Ferrari minicars made me speechless. They must be toys for proper grown-ups.


中世の町シエナ A medieval city, Siena

アマルフィ海岸を離れ、北へ向かう途中、中世の街並みが残る町、シエナに立ち寄りました。

シエナは中世、都市国家として栄え、一時期フィレンツェのライバルでもあった町。当時中央イタリアでは、町の広場は都市の独立と誇りの象徴だったそうです。なかでもシエナのカンポ広場は、ヨーロッパ有数の素晴らしい広場とされ、そこで伝統的に行われる裸馬レース「パリオ」でも有名です。

We stopped in a medieval city, Siena on the way to northern Italy after leaving the Amalfi coast.

In medieval times, Siena prospered as a city state and once was a rival to Florence. Throughout central Italy, the town square was an expression of civic pride and independence. Siena's town square, Piazza del Campo, is one of the greatest in Europe and is also famous for the Palio, its traditional bareback horse race.

フィレンツェ軍に敗れた後立てられた(1560年)という城塞を訪れ、国営のワインショップ、エノテカ・イタリアーナをたまたま発見。イタリアの各地から厳選された1500種類以上のワインが常時展示されています。実際イタリアにはその10倍くらいの銘柄が存在するとそうです。すごい。日本酒は約5000以上の銘柄があると言われていますが・・・。どちらにしても、もはや選べる限界を超えていますね。

We went to a fortress, Fortezza Medicea, buit in 1560 after Siena was defeated by the Florentines. We found a wine shop run by a public institution, Enoteca Italiana where more than 1,500 wines from all over Italy are on permanent display after having been carefully selected by a judging committee. The staff said there are ten times as many wines produced in Italy. Astonishing. As for sake, Japanese rice wine, there are said to be more than 5,000 kinds in Japan, which makes choosing one, difficult..   

中世の街並み、カンポ広場、そして素晴らしく装飾された大聖堂は一見の価値ありです。シエナはフィレンツェの栄光のかげに隠れて日本ではあまり有名ではないですが、中世に紛れ込んだ感じがする素敵な町した。もっとじっくり見てみたかったです。

The range of medieval buildings, Piazza del Campo and the fabulously decorated Duomo were stunning. Siena is out of the limelight in Japan behind the glory of Florence but it was a fantastic place in which to steep myself, as if I was in the medieval times. I wished I had been able to stay longer to explore.

アマルフィ海岸と神々の道 The Amalfi coast and the path of the Gods

「アマルフィ」という名前は日本で邦画『アマルフィ 女神の報酬』のCMと共に流れたサラ・ブライトマンの”Time to say goodbye]”の美しいメロディーとともに頭の中にこびりついていました。いつかその美しい海岸に行ってみたい・・・その夢がついにかないました!

Since I saw a preview of a Japanese file,"Amalfi: Rewards of the Goddess"on TV, the name Amalfi and the film's theme song, 'Time to say goodbye' by Sarah Brightman, had stuck in my mind. It became one of my dreams to go to the celebrated picturesque coast one day. Now it has come true !!

海岸にある町マイオリを宿にとり、念願の海岸沿いを歩きました。かつて船と徒歩でしか行き来できなかった隣町への移動ですが、今は道路が走っています。でもその道は・・・狭っ!車2台がようやくすれ違えるくらいなので、カーブでは対向車を待ってストップするかバックしなければならない状態。そんな歩道なんかもちろんない道路をアマルフィに向かって出発。ウォーキングコースは他にあって本当は歩くべきではないんでしょうが、その道路は海に面していて絶景が望ぞめるのです。隣町ミノリで絶品のケーキを楽しみ、アマルフィ海岸最大の町アマルフィにたどり着きました。

We based ourselves in Maiori on the Amalfi coast and went out for my desired coastal walks. In the past, the only way to get to the next village was by ship, or on foot. Now there is a road along the coast. However, it is so incredibly narrow, two cars can just pass each other. Actually, at curves one has to stop or even back to let oncoming traffic pass through. As a matter of course, there is no pavement. I guess people should not walk on the road, but we couldn't resist doing it as it was just skirting the coast with fantastic views. We also enjoyed a masterpiece of cake at the next town, Minori and arrived in Amalfi, the biggest town on the coast.

翌日はアマルフィからポジターノまでフェリーで移動。海からみる景色はまた格別でした。目的は「神々の道」を歩くこと。有名なはずだから行けば分かるだろうと、下調べをせずにポジターノに到着。そこでもらった町の地図を見るとスタート地点までちょっと遠い。ま、いいか歩けるよね、と思ったところが甘かった。後で知ったのですが、普通スタート地点(ノチェッレ)までバスで行くらしい。階段上り約1700段+登り坂。スタート地点につく前に昼食は食べ終え、水も飲みつくしました。夫曰く、「神々の道につく前に(息絶えて)神に会うかと思った。」

The following day, we took a ferry from Amalfi to Positano. The views from the sea were exceptional. Our aim was walking on 'Sentiero degli Dei,' the Path of the Gods.  We didn't check the details of the path in advance, thinking it would be easy to find out as it's famous. In Positano, we got a town map. The start point of the path seemed to be a bit far. Well, it would be all right...That was a big mistake. Later we learned that people normally get to the start, Nocelle by bus. We climbed up around 1700 steps, plus slopes. All of our lunch and water had vanished before we even got to the start. My husband thought he would expire and meet God before he reached the Path of the Gods.

天気にも恵まれ、努力の甲斐がありました。 はるか上から見下ろす町や海岸線は絶景でした。まさに神々の道。ぶどうやレモンを育てる急斜面の段々畑もすごい。世界有数の観光地ですが、昔ながらの生活も続けられているようです。

Anyway, it was worthwhile. Thanks to our effort and the sunny weather, it was heaven looking down at the coastline and towns nearby, as if we were in the sky. I was also amazed by the terraced fields on steep slopes, on which grew vines or lemons. Although the stunning coast became one of the top tourist destinations, some traditional livelihoods still continue as in the past.
