我が家は殺菌処理前の牛乳を近所の農家から買っています。そこに行ったら門にキジが20羽位つるされていました。（注：イギリスでは期間限定で特定の野鳥を銃猟できます。）
猫が辺りに群がっていたので、農家の方に猫のことを伝えると「たくさんあり過ぎるからいいんです。いらないからよかったら持っていって。」と言われました。
そして夫は8羽持ち帰り、羽をむしって、足と頭をとって、内臓も取り出しました。初めてやったそうです。エライ。
2羽はオーブンで蒸し焼きにして、6羽は冷凍庫へ。ちょっと肉は固くなってしまいましたが、野生のキジはおいしいです。鶏と鴨の中間みたいな味でしょうか。

We buy untreated milk from a farm nearby. When we went there, there were about 20
pheasants hung on the gate. (Note; In the UK, one can shoot certain birds
during the shooting season.)
Cats were showing an interest. Having been told about the cats, the farmer’s wife said, ‘It’s all right, we have too many. Help
yourself, otherwise they would be wasted.’
So my husband brought 8 pheasants back. He
plucked them, taking off the legs, heads and the organs out. It was the first time he
had done plucking. Well done.
I cooked two of them in the oven and six
went into the freezer. They were a bit tough but were delicious. It tastes like a cross between chicken and duck.
